About the Recipe

When you realise this is prepped and ready to go in the firdge, you're already winning and it;s only breakfast time. This is the recipe that feels like you've turned chaos into calm. The grated carrot is a genius way of getting veg into your morning routine to support your gut and it's easy to up your protein intake with the addition of a minimally processed powder if you have it to hand. If not the greek yogurt, nuts and oats at least get you started.

Ingredients

40g rolled organic oats

40g grated carrot (about half a medium carrot)

Small handful of sultanas or raisins

Protein powder (optional)

1/2 tsp cinnamon

1tsp honey or maple syrup

120 ml milk of choice

3 tbsp Greek yogurt

Chopped walnuts or mixed nuts for topping

Preparation

  1. Add oats, grated carrot and sultanas to a jar along with the cinnamon and protein powder if using. Mix together thoroughly.

  2. Add the milk and honey or syrup and stir together until thoroughly combined.

  3. Top with the yogurt and nuts, seal the jar and leave in fridge overnight.
